Red Choi is a hybrid variety of bok choy that has red or purple leaves.  It is generally a mild and tender variety.

Storage tips:

Stored in an open or perforated plastic bag in the refrigerator, red choi is best when used within 2 or 3 days.

As with other leafy greens, if you wash them, be sure to thoroughly pat them dry as standing water speeds up the wilting process.
