Radishes




Radishes are an interesting root vegetable in that they play so many roles well.  It can be a garnish on a salad or it could be a main dish.  There are also many, many varieties of radishes, all with fairly pronounced differences in flavor and character.

In general, radishes have high levels of vitamins C and B6, folic acid, potassium, riboflavin, magnesium, copper, and calcium.

Storage tips:

Like beets, the stems and leaves of radishes should be trimmed off before storing to prevent the leaves from pulling moisture out of the root.  Leave any extended roots intact however until ready to prepare.

Place the unwashed radishes in a perforated or open plastice bag in the vegetable crisper (away from fruits).

Radishes can keep this way for 10 days to 2 weeks.
