Lettuce - Ruby Red




Ruby Red is one of the darkest of the red-colored lettuces, which is caused by antioxidants called anthocyanins.  These compunds developed to help to protect plants from high ultraviolet light.  Anthocyanins have been studied for their potential benefits in fighting cancer, inflamation, diabetes, again and neurological disease, and bacterial infections.  It should be noted however that the level of these antioxidants in leafy vegetables is significantly lower than in dark berries, which should be the primary source of these compounds in the diet.

Most lettuces are a great source of vitamins A, C, and K, as well as folate (B9), manganese, and chromium, and dietary fiber.

Storage tips:

Leaf lettuces like Ruby Red should be washed and very thouroughly dried before being stored in the crisper drawer of the refrigerator.  As much moisture as possible should be removed from the leaves before storing, as any excess water can speed the wilting process.  A salad spinner and pat down with dry paper towels is recommended.

A damp paper towel can be wrapped around the lettuce before storing in the crisper, to maintain a humid but not wet environment.
